Sicilian Fennel and the Placitas Sky
The Sicilian fennel is so pretty when it goes to seed this time of year! And the fragrance, if you rub a seed between your fingers, is heaven. This is one of the many herbs that we grow in our 505 Spirits garden to give our Aristology Red and Aristology White vermouths their distinctly delicious and complex flavors.

| Fall Color in the Vineyard | There are still a few gorgeous leaves on the vines. Did you know that the soil in Placitas is particularly suited to make really intensely flavored grapes for complex and delicious wine? As long as they get just enough water but not too much, the grapes are in a sort of stressed state that actually makes really fantastic wine!
